Chiloso Mexican Bistro was, unknowingly, a “work in progress” for close to always.
As uncle and nephew, Joe and David had been parts of a family where the FOOD was always as important as the occasion. And for them, preparation of the food, was even more important. It was a passion that was passed on by a grandmother and mother who never looked at cooking as a task, but more as a way to share.
The doors to the first location opened on December 28, 2005 and Joe and David began sharing their ideas of fresh, bold flavored, Mexican food. The goal was to start a food company and to prepare food the best way they knew. The menu has and will continue to evolve. The constant is that it centers around a small number of fresh ingredients prepared simply.
